The olive oil from Siena territory is products with least two of following typology of olives, utilized singly with quantity least of 10% and jointly with quantity least of 85%: Frantoio, Correggiolo, Moraiolo e Leccino. We can have need others variety of olive but in quantity lower of 15%.
The color of olive oil is between green and yellow, with chromatic gradations that can be changing in the time, fruited fragrance, bitter and spicy taste. The maximum acidity accepted is equal to 0,5%.
